in 2004, Chimney Park Bistro brought to Windsor the best of fine
cuisine in a comfortable, yet stylish, atmosphere. Now in 2007,
and under new ownership, Chimney Park is making history in Windsor
with new innovative American cuisine.
We
offer friendly service and a high quality dining experience. We
continue to pride ourselves on our relationships with local producers
and the ability to provide delicious dishes using only the freshest
ingredients.
Now headed up by owner and chef, Jason Shaeffer, Chimney Park continues to embrace a refined but casual approach to cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel de Coronado in San Diego, gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado.
