Cheeses

 

Windsor Dairy Glendevey

Made from unpasteurized cow milk, Glendevey is a local version of the classic aged Swiss Gruyere. A natural rind, firm cheese with a sharp, complex flavor that is both nutty and floral.

 

Windsor Dairy McIntyre

The mildness of the jack cultures in McIntyre showcases the rich flavor of Windsor Dairy raw milk. Aged for 3 to 6 months, this firm, nutty Jack has a subtle complexity with a creamy smooth finish.

 

Cozy Cow Goat Gouda

A semi-hard Dutch style cheese that is smooth and velvety with caramel undertones, a bone-white color and a pleasing piquant taste. The pasteurized, cultured milk is converted to curds and whey and then formed into 10 and 20 pound wheels. After a salt brine bath, the cheese is coated and aged for at least 90 days.

 

Cozy Cow Sheep Raclette

An Alpine style cheese made with pasteurized sheep milk. Aged at least 90 days that yields a firm texture packed with earthy and rich flavors.

 

MouCo ColoRouge

A soft-ripened, pasteurized cow milk cheese that is turned and smeared by hand. Smearing is a process by which each cheese is rubbed to help along the development of the special rind characteristics. The cheese is then wrapped in a special foil imported from Europe that allows it to "breathe" oxygen thus keeping the cheese "alive" and fresh during its entire life. Soft and creamy with mild buttery overtones give way to complex spiciness.

 

Wines

 

Charles Smith Wines, Kung Fu Girl Riesling, Columbia Valley, WA, 2010

This single vineyard sourced Columbia Valley Riesling sits in a great cool climate alluvial plane.  Asian pear and white flowers permeate the nose with apricot, key lime and minerality throughout.

 

Chateau de Lavernette, Beaujolais Villages, France, 2009

A well structured Beaujolais with a great nose of forest floor and wild blueberry. The ample fruit has a lush yet slightly tart character with lingering minerality and a very clean finish.

Classic Thanksgiving wine!

 

Michel Gassier, Cercius, Cotes du Rhone Villages, France, 2009

Composed of 85 percent Grenache and 15 percent Syrah, Cercius represents a naked expression of Cotes du Rhone as it is aged completely in concrete prior to bottling. This medium to full-bodied wine possesses a deep ruby color in addition to copious black currant and black cherry fruit interwoven with graphite, crushed rocks and spice with silky smooth finish.

 

King Estate, Vin Glace Pinot Gris, Oregon, 2007

A sweet and seductive desert wine made from 100 percent pinot gris. Apricot, honeysuckle, peach and pear fill the mouth with just a touch of soft acidity on the clean finish.

NoCo Active 20/30

Christmas for Kids

Partners Mentoring Youth  and Northern Colorado Active 20/30 Foundation are combining forces again this holiday season to support vulnerable youth in both Larimer and Weld counties.  We are excited to kick-off the 2011 Christmas for Kids Campaign.  This campaign is a year-end appeal to support 70 youth in the Partners mentoring program with a goal of raising $100,000 by December 31, 2011.

A highlight during this campaign is a life-skill activity for Partners youth organized by NOCO Active 20/30 members.  This life-skill activity will take place on Saturday, December 3rd where over 150 northern Colorado youth, with their adult mentors, will be set loose in Walmart, armed with a gift card.  Their mission - a holiday shopping spree!  But this is not your ordinary shopping spree.  Youth will seek out gifts for family members so they can share this joyous season with their loved ones.  In the process, youth will acquire life skills by developing a shopping list, budgeting, and most importantly, thinking about what might make that special someone in their life happy.  After the shopping spree, everyone will head to the Embassy Suites for a gift-wrapping session with the CSU Female Water Polo team and breakfast provided by Embassy Suites. 

The Partners mentoring program creates and supports mentoring relationships between positive adult role models and youth facing challenges in their lives.  After a year in the Partners mentoring program youth show increased self-esteem and self-confidence, decreased alcohol, drug use and juvenile delinquency, and improved academic performance and future outlook.  Your investment in these youth will result in a stronger and more vibrant community.

Colorado Natural Beef

 

Boulder Valley Premium Natural Beef is one of our new natural beef providers.  All Angus cattle are ranched in the Rocky Mountain region and finished with antibiotic free, natural corn in Colorado.  Growth hormones are never used and this beef is completely natural.  Cuts and preparation change weekly.  We had great success with the tenderloin for a Filet Mignon.  Flat Iron steaks are available this week.  Continuing with this support of local ranchers producing natural beef we will have natural grass fed beef available soon.
