Blended of 60% Grenache Blanc and Gris, 30% Chardonnay and 10% Marsanne

Côtes du Rhone Domaine de la Garrigue "Cuvee Romaine"2007

A sensational blend of 65% Grenache, 25% Mourvedre, and 10% Syrah.  Rustic in style with blackberry, cherry, lavender and licorice with ripe fruit counterbalanced by

good supporting acidity.

Château Tirecul La Gravière "Les Pins" Monbazillac 2005

Produced at a small vineyard right outside Sauternes. A beautiful blend of 80% Semillon and 20% Muscadelle, it offers wonderful purity along with a honeyed style revealing nectarine, marmalade, and crème Brûlée.

 

Cheeses

Ossau Iraty (Sheep)

Ossau-Iraty is produced in south-western France in the Northern Basque Country and in Béarn. It has been recognized as an appellation d'origine contrôlée (AOC) since 1980. It is one of only two sheep's milk cheeses granted AOC status in France. Although the cheese received AOC status in the 80s, it is of ancient origin, traditionally made by the shepherds in the region.Ossau-Iraty is rather medium-soft light in color and very complex yet delicately smooth flavors. This cheese tastes slightly akin to cow's cheeses of similar texture such as Alps cheese. Ossau-Iraty is complex and includes an edible slightly white-moldy tart rind which adds considerably to the experience. This is a creamy, not bitter, not overly sweet, perhaps slightly nutty cheese with a gentleness and ability to please. It finishes richly and smoothly. It is safe for those who are lactose intolerant.

 

Le Chevrot by Sevre Belle (Goat)

Le Chevrot is a live ladled 'molded' cheese made from goat's milk. This small gourmet cheese is made by Sevre et Belle; a small cooperative in the village of Celles-sur-Belle in the West of France, founded in 1893. Throughout the generations, Sevre et Belle has changed and adapted, creating products of consistently exquisite taste. Le Chevrot is not wrapped and can thus ripen slowly gaining in character, when kept in the fridge. Serve Le Chevrot at the end of a meal with a white wine when the cheese is young or with a red wine when it has matured.

Brillat-Savarin (Cow)

A soft, white-crusted cow's milk cheese with at least 75% fat in dry matter (roughly 40% overall).  It is a triple cream Brie that is luscious, creamy and faintly sour. It goes well with Medjool dates and also champagne.  Pairing with red wines is difficult, as any mushroominess or "moldy" taste will bring out the tannins of the wine. Brillat-Savarin is also quite salty when ripe, which may disturb the taste of red wine. It does pair well with Pale Ale and Champagne. The carbonation wipes the fattiness from the palate and the malts enhance the creaminess of the cheese.

2 Years from the Tornado

Today marks the 2nd anniversary of the devastating tornado that hit Northern Colorado and Windsor on May 22, 2008.  We remember the impact it had on the community and how we all pulled together and rebuilt the town.  Thanks to all that helped at the restaurant and our Windsor neighbors.

Colorado Produce on Our Menu

With the arrival of May brings fresh local produce from our farmers.  Rainbow chard, spinach, radishes, rhubarb, young greens and basil are on the menu from Full Circle Farm (Longmont), Local Roots (Fort Collins) and Grant Family Farms (Wellington).  We look forward to the arrival of new items within the next few weeks…look for menu changes!  We are also proud to have produced 500 pounds of compost (from our kitchen waste) for Karen McManus at Local Roots!
