Cheese and Wine Tasting

Sunday June 27th World Cup Style!

Wines of the World Cup hosting South Africa paired with cheeses from “the favorites” to win it all…at least before the tournament started!

Wines of South Africa (Check Out the Wine Spectator Ratings!)

Bellingham, Chenin Blanc, Citrus Grove, 2008

South Africa’s most widely grown white varietal from the Agter-Paarl region.

The vines yield a fruit forward, crisp wine with tropical fruit and a creamy mid palate.

Glen Carlou, Chardonnay, 2009

Ripe pear, lemon intermingles with fresh acidity and hints of melon and grapefruit.

Wine Spectator awarded Glen Carlou South Africa’s “Best Buy” and an 89 rating.

Glen Carlou, Grand Classique (Red Bordeaux Style), 2006

Glen Carlou’s signature red is a classic Bordeaux blend showing ample structure with ripe black fruit, tobacco and layers

of dark chocolate and spice. Wine Spectator rated 90 points.

Robertson, Late Harvest Gewurztraminer, 2008

Full bodied with honeysuckle and rose petal bouquet.  Balanced sugar and acid with a touch of honeyed Botrytis.

Cheeses

Manchego - Spain

Among the great traditional cheese of Spain, said to be the favorite of Don Quixote, Manchego is cured in the ancient cattle-raising region of La Mancha from the milk of Manchega sheep. The Dominion of Original seal guarantees the quality of this tangy, full-flavored, slightly grainy cheese.

Reggianito - Argentina

Argentinean Reggianito cheese is Italian style very similar to Parmigiano-Reggiano. Made by Italian immigrants to Argentina, Reggianito means 'little Reggiano' as the cheese is produced in wheels much smaller than Parmigiano-Reggiano. Made with pasteurized cow's milk, Reggianito is slightly saltier than its Italian namesake but it still has the zesty crunch of the original.

 Stilton – England

Long Clawson Blue Stilton has a crumbly texture with sharp tangy flavors. As it matures, the texture becomes creamier with a milder note.

Aged Gouda – The Netherlands (Holland)

Beemster Classic is matured for no less than 18 months to ensure a wonderfully complex nutty flavor with lingering fruit on the palate. The beautiful color of this cheese instantly reminds you of caramel.

This is a great social event and the cost is $25 per person. We ask that you arrive between 5:30 and 6:30 PM. There is not a set ending time.

4th Annual NoCo Active 20-30 Children’s Foundation Suitcase Party

This is the signature event of the NoCo Active 20-30 Club. The event was created to stand out above all the “event clutter” currently in Northern
Colorado
. It is positioned as a high-end event with an attendee list to match.

The night culminates with a raffle where the winner(s) fly off by private jet to spend a luxurious weekend in Napa Valley, CA. Held in a hangar at the Fort Collins/Loveland airport; this will be one of the more truly memorable fundraisers you have attended.

The all-inclusive night includes: drinks, heavy appetizers (Catered by Chimney Park!), silent auction, blind or live auction,
live music, dancing, and, of course, the raffle.

Tickets for the event are $150/person of which $125 is tax deductible.
Sponsorship opportunities start at $2,000. Live and silent auction contributions are also welcome and appreciated.

New Menu Items and Colorado Produce

Now that we have seen the new crops hitting the back door, new menu items are coming soon.  Look for “Shrimp and Grits” to return this summer highlighting crisp ham from Long Family Farms paired with a peppery sauce with okra grown  from Local Roots Farm.  The beet salad will take on a new dimension soon – as beets arrive from Full Circle Farms.  Asparagus and rhubarb are on the way out but we can not wait for all the summer produce blossoming now!

Taking a Break in July

The staff will be taking a short break from July 4th through July 6th with the restaurant reopening on July 7th.  Word on the street is that camping, outdoor activities and of course food/wine relaxation will be had by the entire Chimney Park team!
