Cheeses

La Serena

Sheep's milk cheese hailing from the Extremadura region of Spain and has been name-protected with DO status since 1992. Serena is rich and creamy and combines a gentle bitterness that is balanced with an earthy, pungent flavor. As the cheese ages, its rind becomes leathery and the interior ripens to a soft, smooth, spreadable paste. Like many Spanish and Portuguese cheeses, Serena is a terrific party cheese and can be served by the wheel with a hole cut in the top and crusty peasant bread for dipping.

 

Idiazabal

Pressed cheese made from unpasteurized sheep milk, usually from Latxa and Carranzana sheep in the Basque Country and Navarre, Spain. It has a somewhat smoky flavor. The cheese is handmade and covered in a hard, dark brown, inedible rind. It is aged for a few months and develops a nutty, buttery flavour, eaten fresh, often with quince jam. If aged longer, it becomes firm, dry and sharp and can be used for grating.

Mitiblue

If Roquefort had a Spanish cousin, she would be Mitiblue, made with the milk of sheep grazing in the mountains of Castille-Leon and produced using methods similar to those for making Roquefort. The pale, cream-colored paste has a beautiful webbing of dark green mold, and the refreshingly tart, milky; minerally flavors are quite eye-opening. Mirablue's finish gives an electric jolt and slightly numbs the tongue. Crumbly, semi-dry texture.

 

Leonora

From the dry, arid hills northwest of Madrid comes this large brick of soft, cakey goat’s milk cheese that will dazzle your palate with bright grass and lemon flavors. The crusty, natural rind makes a beautiful contrast with the pure white interior.

 

Wines

Naia Verdejo, Rueda, 2008

This 100% Verdejo is a bright white offering lemon, asparagus, slate and a touch of honey with dry and crisp acidity.

 

Castano Rosado, Yecla, 2009

This rose is blended from 85% Monastrell, 5% Syrah, 5% Garnacha and 5% Cabernet Sauvignon. It shows strawberry syrup with a hint of licorice, has an almost oily, viscous mouth-feel with candied fruit and light acidity.

 

Faustino VII Rioja 2007

This 100% old world style tempranillo is an earthy, lively red, shading to ochre, reminiscent of a vine leaf in autumn. Beautifully combining the vanilla from the oak with the freshness of the grapes. Excellent balance in the mouth, velvety and elegant. With a very intense, persistent finish.

 

Celler el Masroig "Sola Fred" Montsant 2008

This dark and fruit-filled blend of Carinena and Garnacha offers a silky and ripe wine balanced with good acidity and a long finish. 90 pts Robert Parker.

 

This is a great social event and the cost is $25 per person. We ask that you arrive between 5:30 and 6:30 PM. There is not a set ending time.

New (and old) sustainable measures…

CP is now recycling all paper, plastic, glass and composting to boot. We have brought in dimmable CFC floodlights and bag-less waste baskets. It’s the little things that count!

 

4th Annual NoCo Active 20-30 Children’s Foundation Suitcase Party

 

This is the signature event of the NoCo Active 20-30 Club. The event was created to stand out above all the “event clutter” currently in Northern
Colorado
. It is positioned as a high-end event with an attendee list to match.

The night culminates with a raffle where the winner(s) fly off by private jet to spend a luxurious weekend in Napa Valley, CA. Held in a hangar at the Fort Collins/Loveland airport; this will be one of the more truly memorable fundraisers you have attended. The all-inclusive night includes: drinks, heavy appetizers (Catered by Chimney Park!), silent auction, blind or live auction,
live music, dancing, and, of course, the raffle.

Tickets for the event are $150/person of which $125 is tax deductible.
Sponsorship opportunities start at $2,000. Live and silent auction contributions are also welcome and appreciated.

We will add new bar appetizers to the menu next week.  Old stand bys will remain…Fondue, Skewers and Truffle Chips.  Look for a “BLT” Bacon, Lettuce and Truffle sandwich, Steamed Spiced Shrimp, Yuzu Marinated Tuna Sashimi and a “Tasting of Amuse Bouche”!
