Zamorano
Sheep’s milk,
made in the province of Zamora, Spain. This
hard cheese which is typically aged about 6 months. Similar to Manchego but mcuh richer and
nuttier. The cheeses are turned often and rubbed with olive oil, giving the
cheese its characteristic dark color. This cheese owes its flavor character to
the breed of sheep, the "small, scruffy" Churra and the Castilian
sheep, predominant in the region, to the cold and humid climate conditions, and
to its long aging in cellar

We are roasting Poblano chilies and infusing it with fresh herbs. The heat won’t be too much and the Sauvignon

Montepulciano and Sangiovese varietals, a full bodied, rich and robust wine. Fruit forward with plenty of tannin which definitely lingers, nicely balanced.
Thomas Halby, Cabernet Sauvignon,
Smooth
in texture with ripe black cherry, currant and mushroom flavors with depth,
presence and style. Aged 13 months in
French and American oak, 100% Cabernet Sauvignon.
Beringer,
Apricot and honeysuckle aroma with pear notes, nicely balanced, not overly viscous. Balanced with crisp and clean finish.
